  • 50g demerara sugar
  • 150ml malt vinegar
  • large bunch mint

  1. Whizz sugar and vinegar with mint until finely chopped. Tip into a serving bowl and set aside for 10 mins for the sugar to fully dissolve.

Does anyone know how long mint sauce will keep for? I too have a glut and would like to keep some over the winter when the mint leaves are not so young and fresh.

Simple mint sauce. Try white wine vinegar or rice vinegar for it is less acidic and children might like it because it is milder.
