  • 200ml hot low salt vegetable stock (from a cube is fine)
  • 2 spring onions

  • 1 red pepper
  • ½ cucumber
  • 50g feta cheese, cubed
  • 2 tbsp pesto



    Pesto is a generic Italian name for any sauce made by pounding ingredients together.


  • 2 tbsp toasted pine nuts


  1. Tip the couscous into a large bowl and pour over the stock. Cover, then leave for 10 mins until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper, and dice the cucumber. Add these to the couscous, fork through the pesto, crumble in the feta, then sprinkle over pine nuts to serve.

Never thought to use pesto as a salad ingredient before, but this worlks really well. I added a few glugs of olive oil as it was a bit stiff, and some garlic and black pepper. Omitted the pine nuts as they cost an arm and a leg, and used roasted salted peanuts instead, which worked fine. Thanks, a really nice easy recipe.

I made mine three hours ahead, deliberately, to let the flavours blend. I didn't refrigerate it either.

My go to salad for years. So adaptable. Add raw chopped courgettes, chopped tomatoes, green olives, use pumpkin or sunflower seeds. Add rocket or watercress... leave out cucumber.. whatever - it just works!

Super easy and super yummy lunch recipe to take to work! I also put cherry tomato in it and lots more pesto.

Love this. I usually use a whole tub of fresh pesto so more than in the recipe. I also do a mix of bulgar wheat and cous cous and I use firm goats cheese instead of feta.

Amazing!! I chopped up some cherry tomatoes, beetroot and avocado and added them, and served with a wholemeal pitta bread. Also only used 100ml of stock. Delicious quick lunch!!
