One-pot chicken pilaf

Keep the washing-up down to an absolute minimum with this one-pot supper - you can even eat it out of the cooking dish!

Method

  1. Heat the oil in a frying pan, then fry the onion for 5-6 mins until softened. Add the chicken pieces, fry for a further couple of mins just to colour the outside, then stir in curry paste and rice. Cook for another min.
  2. Pour in the chicken stock and throw in any larger bits of frozen veg. Bring to the boil, lower the heat, then cover the pan with a lid. Cook for 10 mins, then stir in the remaining veg. Scatter over the spinach, cover, then cook for 10 mins more until all the stock is absorbed and the rice is tender. Give everything a good stir, season to taste, then tuck in.

    I love this recipe. you can always vary the vegetables you put in and as others have said it's also great using any fresh veg you've got. I've made this a few times now and it's just gets better each time I make it!

    It worked really well however I did top up the water in the pan whilst cooking as it seemed to be absorbed very quickly. I also cooked the frozen spinach and added it later in the recipe. Very tasty

    Delicious, trebled the ingredients though double would have been more than enough for two adults and a teenager. However my husband is not complaining as he now has a huge tub for his lunch today!! Used balti paste, frozen cauli, green beans and peas.

    My 3 year old hates curry, hates rice and hates veg! However, he thinks this recipe is absolutely delicious and scoffs the lot. It is fabulous as it is quick, requires very little washing up, and is a really tasty dish. For a busy family requiring healthy, quick and tasty food, this is a fabulous recipe!

    This is one of my 'staple' recipes now! I follow it exactly to the instructions but used Thai Green Curry paste, because I couldn't find any regular Indian curry pastes when I went to the supermarket. Everyone who tries it, loves it, and whenever it's my turn to cook, my flatmates always say they want me to cook this again! :-). I think I'll try it with a different curry paste at some point, but for now, I love it so much with the Green curry paste and it's a winner!

    I cooked this last night for my family and found it was a tasty, simple and filling meal the whole family enjoyed. I used chopped chicken breast instead of thigh meat and the dish worked perfectly. Will definitely make this again.

    Made this last night and wasn't expecting much, but it really was yummy. I used normal mild curry powder, peas, green beans and sweetcorn - added in some garlic and chilli. Having leftovers tonight for dins and looking forward to it!! One for the book......

    I had to top up the water in the pan as it seemed to get absorbed quickly. Had mixed comments from the family so next time I'll play around with the ingredients and see if they like it any better.

    Good recipe. I am a bit of a veggi freak so put 1 kg of fresh veggies in for 5 people, and I cup of rice (and of course 2 of chicken stock). Very tasty considering how quick and easy it is. Great for those busy days.

    I made a version of this for my children (9 & 10) and their friends one night for tea. I used small cubes of pork, omitted the curry and changed the veg to carrots, peas and red onion (my cupboards were bare). I cautiously put it in front of them and they all scoffed the lot and the friends even said 'can you give this recipe to my mum'!. WOW its a winner. I make it properly all the time now for me & hubby. It tastes even better the next day.

    This dish was lovely. I put in some fresh broc and carrots too. I used Thai Massaman curry paste. Very tasty dish, easy to cook, and great that its just a one pot dish!

    Gorgeous! But will use more curry paste next time as it was a bit mild for me (used balti paste). Super easy to make and double. I agree about adding more water during cooking as mine seemed to stick to the bottom of the pan! But as far as simple, tasty dishes go this is a definite winner! Yum yum.
