Tomato & thyme cod

Ready in 20 minutes and low fat, this fish dish is great for a Monday night when you'd rather be on the sofa than in the kitchen

Method

  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.
  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

The sauce for this dish can be made up to a day ahead. Simply cool and chill until ready to reheat.

    A favourite midweek recipe of mine. Sometimes jazz it up with some fresh veg (broad beans, broccoli, peppers) or a good dash of pepper sauce to give it a kick. Love it with brown rice. reheats well next day, I don't mind if the fish breaks up a bit, I like dinner i can eat with a spoon!

    This was so easy to make, i actually done mine in the oven. I made the sauce then just poured it over the cod in a baking dish and stuck it in the oven for about 10 mins, ooh and i added a splash of lea and perrins to it, delicious and super low fat!!

    I made this last night and it was really tasty, i also added some pancetta when i was frying the onions and i used lemon thyme as ordinary wasn't available. I served it with asparagus, green beans ,roasted cubes of potato and sweet potato I think the sauce is very versatile and could be used with chicken as well as fish

    Just made this for the first time tonight and loved it. Only thing was,i didn't make enough sauce..typical. Next time i make it i'm taking a few hints from the comments on here aswell,and maybe adding some peppers and some spices....and will make sure i have ample sauce. Now i'm no Gordon Ramsey when it comes to cooking,but i do enjoy it and this was very easy to make and very tasty.

    This was beautiful. I used the same amount of sauce for two instead of four. And i didn't have any thyme so used a bit of tarragon and that was nice. Served with new pots and veg.

    Mixed opinions on this one. I made the 4 person quantity of sauce for 2 and there was a bit too much, however, it was very flavoursome. My OH was not so sure about the fish poached in the sauce and apparently it did not go well with the rice, broccoli and green beans I served it with.

    As my boyfriend was diagnosed with a high level of cholesterol I had to change our daily menus and become best friend with all kinds of fish you can find in the supermarkets. So when I joined this website I was more than pleased to find loads of fish recepies. But honestly, this one is a winner!!! I made it with cod and added some gralic to the onions(there's never too much garlic for me) and later some chilli, not too much just a bit to give the dish some extra kick without overpowering the fish itself. It turned out to be a real crowd pleaser. Tasted great, looked great and what's even more important it took me less than 20 min to cook (including boiling potates on the side). I don't know where the smoky flavour came from but it gave me an idea to add some chorizo next time for some extra texture. Try it yourself, you won't be disappointed. Buon appetit.
