Speedy sweet potato soup with coconut

Method

  1. Heat the oil in a deep saucepan, then soften the onion for 4-5 mins. Stir in the curry paste and cook for 1 min more until fragrant. Add the grated sweet potato and stock, then bring quickly to the boil, simmering for 5 mins until the potato is tender.
  2. Remove the soup from the heat, stir in the coconut and seasoning, then cool briefly before whizzing with a stick blender until smooth. Sprinkle with coriander and serve with warm naan breads.

    Very good and easy to make. Doesn't spoil that it's really healthy too. I actually put full fat coconut milk (a small can-165 ml) and about 3 teaspoons of curry paste. Fabulous.

    I made this using carrots instead of sweet potatoes (bit of a last-minute dinner emergency), and it was lovely. I had red curry paste, and the amount of heat was perfect. I served it with warm homemade bread, and the whole family enjoyed it. Can't wait to try it with sweet potatoes now!

    I have made this loads of times and it's always turned out lovely. I don't bother grating (too much like hard work) so I cut the sweet potato into chunks and leave to cook for longer.

    This went down a treat with the family. I used a carton of coconut cream as it was in the cupboard and it worked well. I'll make it again and next time I'll chop rather than grate the sweet potato it's less hard work!

    Fab soup. Don't bother grating, just cook chunks longer. I used a fair bit of green curry paste - very nice. Also made the flatbreads to go with which I was a bit dubous about, but actually turns out rather well. For a finer consistency i sieved after blending. Glorious!
