  • 4 chicken breasts
  • 3 slices white bread, toasted
  • 1 egg
  • 1 tsp Dijon mustard
  • zest 1 lemon, juice from ½
  • 4 tbsp reduced-fat mayonnaise
  • 4 ciabatta buns, warm or toasted

Method

  1. Heat grill to high. Put the chicken breasts between 2 pieces of cling film and bash with a rolling pin until they’re about half their original thickness. Whizz the toast in a food processor to rough breadcrumbs, then tip out onto a plate.
  2. Beat the egg and mustard together in a bowl and season. Dip the chicken into the egg, let the excess drip back into the bowl, then press into the toasty breadcrumbs. Put under the grill on a flat baking sheet and grill for about 10 mins, turning once, until golden and crisp on both sides and the chicken is cooked through.
  3. Beat the lemon zest, juice and lots of black pepper into the mayonnaise. Spread some of the mayo onto the bottom halves of the buns, top with a chicken breast and salad of your choice and serve.

First of all loved the recipe. This was fantastic. Slammed in a bit of halloumi for some extra kick. However what we found to much despair was that the lemon overpowered that sweet sweet cheese we put in. Highly recommend serving with some curly fries for that real restaurant experience. Will definitely be making this again !!!!

Didnt add the Lemon to the mayo, but added some chilli, paprika and pepper to the egg and mustard. Also instead i sliced the chicken breast and served in a tortilla wrap with salad and sliced pepper.

Good recipie but definatly needs a little modifying to make it better as i did myself.

These are fantastic. I like my food quite spicy so decided to add garlic ginger and chillies.

Made these tonight, were really great. Although next time I wont be making the lemon mayonnaise. Most likely take the advice of claire241 and make a garlic mayonnaise or maybe some kind of harissa mayonnaise. I will also try and bake them in the oven - didn't make the breadcrumbs as I don't have a food processor so just bought golden breadcrumbs which turned out nice too.

Over all, very good and definitely a keeper in my recipe binder!! Very quick and easy to make, worth that little bit of extra effort :)

For an exotic twist, Try adding desiccated coconut to the breadcrumbs before coating the chicken :)

These were delicious! Simple to make and had a great sense of achievement when munching away on them! Did them in the grill for a few mins on each side to crisp up the breadcrumbs (didn't use ore toasted breadcrumbs) then finished in the oven, served with a side salad and some home made wedges......amazing! Will make again.....so much better then what you'd buy in the chappie and healthy too!

Made these for dinner tonight. The finished result was amazing! I was missing some ingredients such as the mustard but the chicken was divine! I used wholemeal wraps instead of ciabattas. Also left out the lemon Mayo as the boyf is not a lemon fan. Served with corn on the cob and some baked oven chips from Gordon Ramsays recipe. Amazing!! Definitely will make again :)

These are amazing, I mixed cajun spices in with the egg and mustard, just adds a little extra kick, so yummy! Havnt tried the lemon mayo though!

I would love to try this recipe from reading all the rave reviews, was just wondering at what temp everyone was cooking them in the oven at and for how long, as I don't want to use the grill either. Thanks!

Very boring and plain, and why on earth would you put breadcrumbs on the chicken and then stick it in a bun - very unhealthy and stodgy!!

My husband and teenage sons absolutely loved these burgers and they are so easy to make. My husband has coeliac disease and I used Genius gluten free bread to make the breadcrumbs and it worked a treat. Cooked them under the grill and they were fine although had the grill on medium and cooked them for longer than the time stated in the recipe. Will definitely make again! :-)

These are yummy and very filling, my husband looked at me wondering how it would fill him up, he stuggled to finish it. I always make a few baked potato wedges for the left over mayo, light or not I can never waste mayo!!

I have made this twice now and the BF loves it.
I did make a few changes tho. I used just normal breadcrumbs the second time around the toasted ones burn't far too quickly under the grill. I also added some bacon which went down a treat.
With the mayo, does anyone know how long it will keep in the fridge?

This was a really delicious burger. Went with other's advise and cooked it in the oven rather than the grill which worked well. My fiance is not keep on lemon so blitzed a couple of garlic cloves with the mayo instead. Also melted a cheese slice onto the chicken at the end of cooking. It was a hit!

This was a super tasty burger, the lemon mayonaise gave it that extra flavour. Will definately be making this one again.
