Crisp chicken burgers with lemon mayo

Method

  1. Heat grill to high. Put the chicken breasts between 2 pieces of cling film and bash with a rolling pin until they're about half their original thickness. Whizz the toast in a food processor to rough breadcrumbs, then tip out onto a plate.
  2. Beat the egg and mustard together in a bowl and season. Dip the chicken into the egg, let the excess drip back into the bowl, then press into the toasty breadcrumbs. Put under the grill on a flat baking sheet and grill for about 10 mins, turning once, until golden and crisp on both sides and the chicken is cooked through.
  3. Beat the lemon zest, juice and lots of black pepper into the mayonnaise. Spread some of the mayo onto the bottom halves of the buns, top with a chicken breast and salad of your choice and serve.

    The burger was tasty and looked great BUT 10 mins was much too long under my grill; 3 mins per side ample. Breadcrumbed chicken on a bread bun doesn't work at all, leave it out, just spread Dijon mustard on prior to grilling.

    Certainly a favourite with my kids. Tried grilling, but prefer oven baking for about 20-25 minutes. The breadcrumb seemed to cook more evenly that way.

    Rather than toasting and breaking down the bread slices, it's comfier and easier to just brown readymade breadcrumbs on a dry pan. The lemon mayo goes really well with the chicken!

    These are way better tasting and less fattening than the ones you get in fast food places. I've made these 3 times for my bf and he loves them too, I don't tell him it's low fat mayo though!

    This was a really delicious burger. Went with other's advise and cooked it in the oven rather than the grill which worked well. My fiance is not keep on lemon so blitzed a couple of garlic cloves with the mayo instead. Also melted a cheese slice onto the chicken at the end of cooking. It was a hit!

    I have made this twice now and the BF loves it. I did make a few changes tho. I used just normal breadcrumbs the second time around the toasted ones burn't far too quickly under the grill. I also added some bacon which went down a treat. With the mayo, does anyone know how long it will keep in the fridge?
