Pizza omelette

This unusual combination is a real winner and is a great dish to cook with the kids

Method

  1. Heat grill to high. Beat the eggs with the oregano and some salt and pepper. Heat the oil in a large ovenproof frying pan, then tip in the eggs. Cook over a low-ish heat for 4 mins, stirring occasionally until the eggs are practically set.
  2. Place under the grill until set and puffed up. Spread the sauce over, scatter with cheese and olives, then grill again until cheese is melted. Cut into wedges and serve with a green salad.

Pizza or omelette?

Treat the omelette like a pizza, adding your favourite toppings. Grilled peppers, sliced salami or sliced mushrooms would all work well.

    Easily fed four with some chunky chips and a salad - perfect for the kids as they appreciated the 'pizza' side of the meal.

    Pizza is meant to be pizza. Omlette is meants to be omlette. I like both of these dishes, but definitely not together. A big disappointment. 1 star is generous.

    This fed the five of us (along with some salad) for a very satisfying lunch. I used homemade pizza sauce (we make big batches and store them in single or double pizza portions in the freezer) and German sausage, mushrooms and olives. Quite nice indeed!

    Very nice! I made a slight variation of this dish - added mashed beans in tomato sauce and some chopped parsley to add the flavour. Good breakfast alternative!
