With its tuft of spiky, dusty green leaves and cross-hatched, golden orange skin, the pineapple…

  • handful grated mature cheddar
  • a splash of Worcestershire sauce
  • some crisp salad leaves, for dressing

Method

  1. Heat the grill to medium. Split the wholemeal muffin in half, then lightly toast. Top each half with 1 slice ham, 1 pineapple ring, drained of juice, and a small handful grated mature cheddar. Place on a baking tray and grill for 3-4 mins until bubbling and golden. Splash with Worcestershire sauce and serve by itself or with some crisp salad leaves.

Excellent dish for a quick lunch, made this last week and it went down a treat with everyone. Will certainly make again.

We loved this one. I used cheese muffins and Double Gloucester with onion and chive. I also accidentally used pineapple chunks instead of rings. We'll certainly have it again.
