Method

  1. Preheat the oven to fan 180C/ conventional 200C/gas 6. Wash the potatoes, but don't bother to peel them. Cut into thickish slices then cook in boiling water for 6-8 minutes until almost tender; drain. Slice the tomatoes to the same thickness. Chop the garlic, then strip the rosemary from its stalks and chop the leaves fairly finely.
  2. Drizzle a little olive oil in the base of a shallow ovenproof dish wide enough to take the chops in one layer. Arrange rows of potatoes and tomatoes across the dish, seasoning with salt and pepper as you go and sprinkling with half the rosemary and all the garlic.
  3. Drizzle a couple more tablespoons of olive oil over the vegetables and bake for 15 minutes, then sit the pork on top, season and sprinkle with the remaining rosemary. Return to the oven for 35-45 minutes, until the pork and potatoes are tender.

    Brilliant & easy dish. We love garlic, so instead of chopping the garlic I used 8 unpeeled garlic cloves (this was to serve 2 people) & tucked them in with the potatoes & tomatoes. I also reduced the oven temperature when the pork chops went in & cooked everything a little longer so that the chops were lovely & succulent

    I love this recipe - have cooked it loads for different people. Just one thing; cook the potatoes for a bit longer so all of them are cooked.

    Have made this 4 times over the past few months; tried lamb chops (wonderful), chicken breasts (ok, but then again I don't like chicken) and pork fillet steaks (wow - amazing!). This is a wonderful dish, a family favourite, and extremly summery - lovely served with wither green veg (broc, green beans and soya beans are my favourite), or salad and garlic bread.

    This is an extremely straightforward recipe and very easy to make. The only issue I have had with it is that the pork can dry out if left unattended so do ensure you use plenty of olive oil.
