Ingredients

  • 250g golden syrup
  • zest 1 lemon, plus juice ½ lemon
  • 5 tbsp breadcrumbs
  • 200g pack butter, softened
  • 200g golden caster sugar
  • 3 medium eggs
  • 200g self-raising flour
  • 5 tbsp milk

Method

  1. Heat oven to 180C/160C fan/gas 4. Mix the syrup, lemon zest, juice and breadcrumbs and spread over the base of a 1.5 litre baking dish.
  2. Beat the butter and sugar until pale and fluffy, then beat in the eggs, one by one. Stir in the flour and milk and dollop over the syrup. Bake for 35-40 mins until golden and risen, and a skewer poked into the sponge comes out clean-ish. Eat with lots of custard, cream or ice cream and extra dribbles of syrup.

I made this for my grandfather's card playing group and it went down a storm - everyone had seconds! The sauce at the bottom went beautifully with custard, but next time I will probably try using half the quantity of breadcrumbs as it was a tad thick. Overall, a real crowd pleaser and a cosy and wholesome after dinner treat! :D

This sponge came out very tasty but took a lot longer to cook than the stated 40 mins. It may have been because we used a glass pyrex dish, but it took a good 1hr - 1hr 15 mins for the centre to cook properly. And by then the edges of the sponge had lost a lot of moisture. I would definitely try it again using a different dish as it is worth the taste! I made it for 2 people so halved the cake mixture but kept the same quantities of the syrup mixture.

Yum. Made half the quantity of sponge but kept the syrup part as the full amount. Taking note of the comments, I added only a small amount of breadcrumbs and only a dash of lemon juice. Really delicious.

I made this exactly as Shellie below suggested. I needed to serve 4, so I used the full recipe amount for the treacle but halved the sponge ingredients. I used an 8 inch casserole dish. It was perfect! (I first tried this a while ago as per the recipe and found it tasty, but a bit dry). Love the lemony kick in the sauce.

This was such a lovely tasty light pudding we all really enjoyed it :) I only used half quantity ingredients though as it was only for 3 people but nxt time I'm gona use again half for the sponge and the full amount for the syrup as it did dry up alittle to much for me x

My 10 year old daughter just made this by herself. It's such a simple pudding but delicious!!! A simple easy tasty recipe. Just don't add up the calories.

Absolutely delicious! Even my fussy teenage Son devoured this yummy dessert! I chose not to include the zest, just the juice & added a few drops of vanilla essence to the sponge. I've only recently discovered this website & everything I've made so far has been very tasty (& edible!). Thank you, Good Food, keep up the good work.

Absolutely loved this last night, went down a treat with the family! Dad even went for seconds! Over cooked it only by a minute but it gave it that extra crunch and was absolutely delicious! Definitely going to make again one day!

Made this last night but used treacle instead of golden syrup. Would also use less breadcrumbs next time as I thought the base would be more runny and sticky. However everyone loved it it and some went back for thirds.

Diana I would use the same amount of jam as syrup, that's what I do when making a sponge in the microwave. A microwaved sponge is lovely, very light and only takes about 10 mins to cook.

Easy and tasty, and goes very well with custard. It's also very good (I think better) with orange rather than lemon.

Made this dessert for friends, everyone loved it. I didn't use more than a couple of drops of lemon juice, as I didn't want it to taste lemony. I also reduced the recipe by a 1/3. Will definitely make it again. Simple and easy to make.

I made this last night, very simple to make, though i didnt use much lemon juice as i didnt want to take away the treacle flour, very light fluffy and moist, also there is plenty left over for dessert tonight : )
