Method

  1. Whizz apricots with dates and cherries in a food processor until very finely chopped. Tip into a bowl and use your hands to work in coconut oil. Shape the mix into walnut-sized balls, then roll in sesame seeds. Store in an airtight container until you need a quick energy fix.

    I didn't have cherries so used dried cranberries. No coconut oil so used sesame oil but reduced it to just 1 spoonful. They are actually quite delicious and just 1 can satisfy my afternoon sweet craving.

    I used some crystalised papaya and ginger instead of the cherries, rolled them in dessicated coconut and ate them straight from the freezer, yum. I had to chop them by had before my processor would entertain them, but I used cheaper dried apricats and dates.

    I used what I had in my cupboard - dates, raisins, apricots and almonds with a drizzle of honey and roasted sesame oil. I then rolled them in dessicated coconut.... Delicious!!!

    I don't know if I can fairly rate this recipe as I changed it so much! I used prunes and dates because that's what I had at home, I then added 1 tbsp of cocoa powder while whizzing the dried fruit, and then I rolled the whole thing in more cocoa powder and it was LOVELY, like a lovely fruity healthy chocolate truffle! made me very happy :)

    I only used dates, almonds and toasted chia seeds. It came out great, I guess you can use whatever you have in your cupboard.

    Fantastic high energy snack. so versatile. I used cranberries instead of cherries and added nuts, didn't need the oil and covered in coconut. Fab!

    I used cranberries rolled in cinnamon, dates, a tbsp of cocoa powder and a small amount of honey to bind, and then rolled in dessicated coconut. Very yummy indeed.
