Cheesy leek & bacon pasta

A creamy and comforting quick pasta recipe, ideal for when you're short on time

Method

  1. Heat the oil in a large non-stick frying pan. Add the leeks and 2 tbsp water, and cook for about 10 mins until very soft. Add the bacon, turn up the heat and fry until cooked.
  2. Meanwhile, cook the pasta following pack instructions. Drain and reserve a mug of the cooking water.
  3. Spoon cheese into the leek and bacon mix, adding some of the reserved cooking water. Season and stir gently over a low heat until melted. Toss through the cooked pasta, adding a little more cooking water, if needed, to help the sauce coat the pasta.

    A fabulous mid week recipe. So quick and easy to make it is ready in minutes. Boursin impossible to get here in Brisbane as are so many ingredients so used a variation on the theme but still well worth the 10mins it took to make!! Definitely one to add to the ever increasing last minute meals thanks to BBC Good Food

    A great quick meal. I fried the bacon till crisp first then saved a handful to sprinkle over at the end. Gave a lovely crunch. Will be making again.

    Great, easy pasta dish. Smoked bacon add the necessary flavour. Would also be tempted to add some extra garlic when cooking the leeks.

    Forgot to buy Boursin so had to improvise. Added some garlic when frying the bacon and leeks and used Light garlic and herb Philadelphia cheese.......very good and a bit lighter on calories. Lovely recipe, easy and cheap.

    Yum Yum. I used tagliatelle and replaced the bacon with diced pancetta. Really easy and very tasty. Stick a garlic bread in the oven and pour a glass of Pinot for an great Friday night supper.

    This is a really tasty comfort food for those chilly evenings. I cooked the bacon under the grill to make it a little healthier. Leeks are one of my favourite vegetables, so I will definitely be making this again before the leek season is through!
