  • 1 tbsp olive oil
  • 300g leeks, halved and finely sliced
  • 8 rashers smoked streaky bacon, sliced
  • 400g pasta shapes (we used penne)
  • 100g herb & garlic soft cheese (we used Boursin)

Method

  1. Heat the oil in a large non-stick frying pan. Add the leeks and 2 tbsp water, and cook for about 10 mins until very soft. Add the bacon, turn up the heat and fry until cooked.
  2. Meanwhile, cook the pasta following pack instructions. Drain and reserve a mug of the cooking water.
  3. Spoon cheese into the leek and bacon mix, adding some of the reserved cooking water. Season and stir gently over a low heat until melted. Toss through the cooked pasta, adding a little more cooking water, if needed, to help the sauce coat the pasta.

Lovely recipe, really quick to make and so tasty! I also used mushrooms and they worked really good with everything. Will definitely be making this again!

Fab recipe! I wanted a slightly healthier version so I boiled the leeks with the pasta and grilled the bacon and used a low fat soft cheese. Still delicious (probably not as good as the fried version, it never is!)

Boyfriend said "it's really, really nice" and rates it 10/10. He a picky eater so new recipes are always a risk. The pets (not so fussy eaters) have been trying to steal some for themselves! Will cook this again sometime. Thanks!

Just cooked this for my very fussy 4yr old & he's loving it! I used roule instead of Boursin because it's half the price & it tastes lovely. Nice quick recipe for times when you don't want to spend ages in the kitchen. Definitely will be making this again :-)

i grilled the bacon first and made my own cheese sauce instead of using bousin , it was an absolute hit , all clean plates this is definately now a firm family favourite

Very quick and easy to make, is very tasty. I used the tip from one of the other reviewers and used Pilidelphia garlic and herb and it was lovely.

This is a really tasty comfort food for those chilly evenings.
I cooked the bacon under the grill to make it a little healthier. Leeks are one of my favourite vegetables, so I will definitely be making this again before the leek season is through!

Made this last night using very mature Saint Agur cheese and double cream left over from Christmas. Very naughty but delicious. Voted 'restaurant quality' by other half.

Yum Yum. I used tagliatelle and replaced the bacon with diced pancetta. Really easy and very tasty. Stick a garlic bread in the oven and pour a glass of Pinot for an great Friday night supper.

Forgot to buy Boursin so had to improvise. Added some garlic when frying the bacon and leeks and used Light garlic and herb Philadelphia cheese.......very good and a bit lighter on calories. Lovely recipe, easy and cheap.

Great, easy pasta dish. Smoked bacon add the necessary flavour. Would also be tempted to add some extra garlic when cooking the leeks.

Super quick and easy, I added a handful of frozen peas. Clean plates all round including kids.
