Cheesy leek & bacon pasta

A creamy and comforting quick pasta recipe, ideal for when you're short on time

Method

  1. Heat the oil in a large non-stick frying pan. Add the leeks and 2 tbsp water, and cook for about 10 mins until very soft. Add the bacon, turn up the heat and fry until cooked.
  2. Meanwhile, cook the pasta following pack instructions. Drain and reserve a mug of the cooking water.
  3. Spoon cheese into the leek and bacon mix, adding some of the reserved cooking water. Season and stir gently over a low heat until melted. Toss through the cooked pasta, adding a little more cooking water, if needed, to help the sauce coat the pasta.

    A fabulous mid week recipe. So quick and easy to make it is ready in minutes. Boursin impossible to get here in Brisbane as are so many ingredients so used a variation on the theme but still well worth the 10mins it took to make!! Definitely one to add to the ever increasing last minute meals thanks to BBC Good Food

    A great quick meal. I fried the bacon till crisp first then saved a handful to sprinkle over at the end. Gave a lovely crunch. Will be making again.
