Method

  1. Heat oven to 220C/200C fan/gas 7. Bring a pan of water to the boil, then tip in the potatoes. Cook for 4-5 mins, drain well, then return to the pan. Put on the lid and shake a couple times.
  2. Set a heavy-bottomed roasting tin on the hob over a medium heat and add the oil. When it’s really hot, add the potatoes and fry for a few mins.
  3. Add the bacon and sprouts, mix everything together, then put in the oven and bake for 30 mins until the bacon is crisp and the sprouts are tender.

This dish is a nice way to use sprouts but I'm not sure about it going with the roast beef in red wine - more like a fried egg!!

I knew form the picture this wasn't a real bubble and squeak - it is a fantastic addition to any roast though! I made this to go with the all-in-one pork and leek roast and it was delicious! Will definitely make this again.

ok - but it isn't really proper bubble and squeak when you set out to make it though is it?
