Carrot & houmous roll-ups

Roll-up, roll-up - snaffle something superhealthy in a flash with these vegetarian wraps

Method

  1. Spread the houmous between wraps. Coarsely grate carrots and scatter on top of the houmous, finishing each wrap with a small handful rocket leaves and some seasoning. Roll up and eat.

Cheese & ham quesadillas

Mix 200g grated cheddar with 140g shredded ham and 1 bunch of sliced spring onions (optional). Divide the mixture between 4 white wraps and fold each one over to make half moons. Heat a large frying pan. Cook the quesadillas for 1-2 mins each side until the cheese has melted and the outside is golden and crisp.

    Found slightly bland when made first so tried again using flavoured hummous and added some chicken, pickled beetroot and spring onions. So easy to take to work and the wrap doesn't go soggy even if made the night before.
