  • 300g dark chocolate
  • 3 tbsp demerara sugar
  • ½ tsp peppermint flavouring

Method

Melt the chocolate in a heatproof bowl set over a pan of barely simmering water. Line a large baking tray with baking parchment and mix the sugar with the peppermint essence. When the chocolate has melted, cool for 1 min, mix with the sugar, then pour into the tray. Spread to a very thin layer and chill until completely firm. Snap into shards to serve. Perfect as a garnish for puddings or with an after-dinner coffee.

Also can we use Icing Sugar instead of demerara sugar??

Absolutely lovely - especially with coffee! As nice, if not nicer than brought chocolates, and a lot cheaper! (they are very like 'twighlight' chocolates) Will CERTAINLY be making these again!

So easy to do, I set the chocolate into a leaf mold and then put the chocolates into Christmas favor boxes on the dinner table. Worked out much cheaper and nicer than buying after dinner mints.

super simple and very effective. Its realy nice if you swap the sugar for popping candy.

This only took about 5 minutes worth of effort and tastes really good. A huge fan of mint dark chocolate so really pleased that I can create it myself now! Might try it with white chocolate next.
