  • 6-8 medium carrots, peeled and sliced
  • 1 medium onion, chopped
  • 2-2 1/2 Pints of Veg Stock
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp of chilli powder
  • Salt and pepper to taste
  • 1 tbsp of vegetable oil


    1. Peel and slice carrots, peel and chop onion finely
    2. Heat oil, and add the carrot and onion, cook until slightly softened-about 5 minutes
    3. Add spices and stir until carrot and onion covered with spices
    4. Add vegetable stock, bring to boil and then simmer for about 15/20 minutes until the carrots are soft
    5. Leave to cool, once cool, blend until smooth
    6. Add more stock if the soup is a bit thick, adding seasoning and more chilli, if you require more of a chilli kick

I made this using carrots, vegetable stock, 3 garlic cloves, 2 teaspoons of chilli (easy chilli from a jar), 3 teaspoons of ginger paste (equivalent of fresh ginger) and it was amazing! Very spicy but soo good for you, fat free too so great for slimming
