  • 225g self-raising flour
  • 225g caster sugar
  • 100g soft margarine
  • 3 eggs
  • 450g ripe bananas
  • 1 tsp orange rind grated (optional)
  • 175g raisins or sultanas (optional)


    1. Preheat oven to 350f,180c or gas 4. Butter or line with baking parchment an 18cm cake tin or 1kg loaf tin.
    2. Put flour, sugar, margarine and eggs into a mixing bowl.Beat with wooden spoon or whisk until well mixed. Do not over mix.
    3. Peel the bananas and mash. Stir into flour mixture with the orange rind and fruit if using.
    4. Put into prepared tin, and bake for 1 and 1/2 hours. If necessary cover with foil to prevent burning. Test with a skewer to see if the cake is done. Turn out onto wire rack to cool a little before cutting.
    5. Stores well for 2-3 days or longer, sealed, in the fridge.

Great recipe, lovely cake. I followed the suggestion of reducing the sugar by 100g and it still tasted perfectly sweet. I covered the tin with foil for the first hour and uncovered it for the last 30 mins to prevent any burning.

Lovely banana bread, reduced the sugar by 100g as find the bananas add a lot of sweetness. Added choc chips, staple recipe in our house now.

Only used the bananas and no other fruit and found the mixture was enough to make two cakes

I've made this many times and it's delicious. Only adjustments I make is to cut down on the sugar by about 50grams and add walnuts or pecans instead of sultanas. So yummy and easy

I used dark chocolate instead of orange and sultanas. Its the only cake I can make and yummy.

Absolutely yummy! This is not too solid in texture as many recipes can be to dense. I have made this many times. Very quick and easy to make. Never fails to please. Sometimes I swap the raisins for walnuts or even chocolate chips. If you want to be very naughty soak your raisins over night in rum!!

Hi - this looks yummy! National Banana Bread day is the 23rd of February. Bananas appeared in the US in the 1870 and it took a while for them to appear as ingredient items for desserts. The actual Banana Bread recipes began being published in cookbooks around the great depression as resourceful housewives didn't wish to throw away overripe bananas (as they were still a costly item to purchase). Love this recipe its the best one I've found for banana bread and tastes amazing. I leave out the orange and raisins and add about 100g of walnuts instead but that's just because i cant have banana bread without walnuts!!

One of the best things i have ever baked, went straight into my recipe journal. I added 40g muscovado sugar and a tablespoon of cinnamon in a stripe through the middle of the cake and dropped the and used 150g currants and sultanas. Result was delicious. Might pop a bit of vanilla extract in next time.

Very easy to make, however how do I stop a crack appearing in the top of the loaf? Is the oven too hot? I always use a loaf tin liner for ease :)
