  • 100g light muscovado sugar
  • 3 wide strips orange zest
  • 1 vanilla pod, split lengthways
  • 140g cooked chestnut

  • mascarpone, to serve (optional)


  1. Put the sugar, orange zest and vanilla in a pan with 200ml water. Bring to the boil, stirring to dissolve the sugar, then add the chestnuts and dried fruits. Simmer, uncovered, for 10 mins until the syrup is slightly thickened. Leave to cool, then serve with spoonfuls of mascarpone if you like.

With some (soya) yoghurt (instead of the mascarpone), this makes a great breakfast. I have added dried figs and plums, because I love fruit. The more the better.
