  1. Heat oven to 200C/fan 180C/gas 6, then toss the potato chunks with the oil and some seasoning on a baking sheet. Roast for 20-30 mins until golden and crisp on the outside, then leave to cool.

  2. To serve, mix the mayonnaise with the lemon juice. Pile a scrunched up piece of ham on each potato, then top with a blob of the lemony mayo. Arrange on a platter with the watercress, then serve.

Absolutely gorgeous and so easy to make. I serve them with pre-dinner drinks and they simply vanish!!!!!!

I did these will two other types of canapé on this website. All were very nice need but. Was surprised that these were my personal favourite.

Made these for a dinner party buffet and they disappeared in a matter of seconds. Seems like a strange mixture of ingredients, but they really are delicious and so easy.

Very tasty, sweet potato and the parma ham are a good combination. I liked the mayo but my boyfriend wasn't keen.

Very easy to make, disappeared very quickly. Used streaky bacon mixed in in half and chorizo on the rest.

I changed it as the only parma ham I could fine was extortionate! I used a slice of chorizo on each one and mixed may and red pesto for the topping. My guests couldn't get enough!

These were really tasy though Iagree with whoever siad that they thought that they would bebetter warm. They are extremely easy to make

I did like these but not all of my guests did unfortunately. I think they would have been best served warm.
