  • 1 cucumber or 3 small Persian/ Lebanese cucumbers, ends trimmed
  • 2 garlic cloves, finely chopped
  • 1 tbsp caster sugar
  • 1 tbsp light soy sauce
  • 1 tbsp Chinese black vinegar or rice wine vinegar
  • 1 tbsp chilli oil

  1. Using a rolling pin or cleaver, smack the cucumber so it splits. Rip into 2.5cm pieces, tip into a bowl with all the ingredients and 1 tsp salt, and toss together. Try with Pork shoulder braised in black vinegar (see Goes well with.)
