Ingredients

  • 1 cucumber, peeled and cut into 1cm dice
  • 6 ripe vine tomatoes, halved, deseeded and chopped into 1cm dice
  • 1 red onion, finely chopped
  • 200g pomegranate seeds
  • 1-1½ limes, juiced (about 40ml juice)
  • 2-3 tbsp extra virgin olive oil

Method

  • STEP 1

    Mix the cucumber, tomatoes, onions and pomegranate seeds together in a mixing bowl. Season well, then add the lime juice and olive oil, mix well again and tip into a serving dish.
