  • 400g pack raw beef meatball (about 15)
  • 2 x 400g cans cherry tomatoes
  • 1 small rosemary focaccia loaf, chopped into large chunks
  • 2 x 125g balls mozzarella, torn
  • handful fresh basil or oregano leaves

  1. Heat oven to 200C/180C fan/gas 6. In a large roasting tin, toss the meatballs with the cherry tomatoes. Season well and cook for 20 mins.

  2. Scatter over the chopped focaccia and mozzarella. Season and sprinkle over a handful of herbs then return to the oven for 15 mins, until the bread is crispy and the cheese melted.

Lovely and easy to make but a bit bland, add in your own veggies, seasonings etc to make it more of a meal and just use this as an easy base.

Really lovely and easy to make, but we add onion and garlic at the beginning as we feel it's a bit bland without.

Made this with tinned plum tomatoes (didn't bother chopping them), as couldn't find tinned cherry tomatoes. Worked really well :)

Well, that was a hit. My six year old pretty much made this for tea tonight, with a little help from his three year old sister. The skills required (eg. tearing up the bread and mozzarella) make it like an 'I Can Cook' recipe, albeit with more calories. Needed a good amount of salt but then I only had own-brand regular tomatoes in, so might have been better with good quality cherry tomatoes. We used the end of a rustic, sourdough style cottage loaf that was going stale and it worked beautifully, so this recipe also ticks the "uses up leftovers" box! Definitely a keeper.

Following others' advice and what I have on hand I tweaked the recipe a little and it turned out amazingly good. I browned an onion and a yellow pepper, then added two cans of chopped tomatoes and about a teaspoon of dried rosemary. Let that simmer for about a quarter of an hour and then poured into pan with meatballs and baked. After 20 minutes I added the cheese ( I just has one ball but it was fine) but no bread as I didn't have any. I served it over whole wheat pasta. Absolutely fantastic.

Awesome dish. You can also hide veg within the bake. Everybody loves it!

Great easy recipe if you're short of time, went down a storm with the family. No effort at all, good one for older children to make on their own. Going to make it again tonight but couldn't find tinned cherry tomatoes in our Tesco, previously got them in Sainsbury's, so I've got plum tomatoes instead which I will chop into big chunks. Will hopefully be ok!

Really liked this. I did however use 1 tin of chopped toms and 1 small jar of Mediterranean veg pasta sauce. Couldn't get any focaccia so used ciabatta. I think done without the bread and mixed with cooked pasta it would make a nice bake.
