  • 300g jar lemon curd (we used Duchy Originals Traditional Lemon Curd)
  • 500g tub 0% Greek yogurt
  • 200g punnet raspberry

A member of the rose family, raspberries have a wonderfully intense, sweet taste, and many…

  • 1 tbsp icing sugar
  • shortbread, to serve

  1. Put the lemon curd and yogurt into a bowl. Fold together for a rippled effect. Divide the mixture between four glasses and chill.

  2. Mix raspberries and icing sugar together and gently crush, then spoon with their juices over the chilled mix and serve.

So lovely! Served it in some leftover Gu pots so I halved the recipe to serve three of us (since the pots are a little small). I think I'd agree with the comments about decreasing the amount of lemon curd but it was still fantastic. I forgot about the shortbread but to be honest it really doesn't need it.

Have made this lots of times now - we always have yogurt and it is so easy to keep a jar of curd in the cupboard ready for this. I don't use the icing sugar and use much less curd than recommended in the recipe, as found it too sweet. Have put blueberries and strawberries on top instead of the raspberries, all work well. I serve it in glass sundae glasses found in a charity shop. I don't bother with the shortbread etc. My husband has suggested that some lemon zest would be a nice addition.

This was a huge hit at my recent dinner party. For being so easy, this is astonishingly delicious and elegant. Since you can make this several hours ahead of time, it's a great option for when you're having guests over.

Absolutely lovely, light, and tasty dessert. Served it to my parents (they are highly suspicious of anything new put on their table!) .. they really, really loved it and I know I'll now get requests regularly. Such a simple tasty recipe and one I'll return to over and over again. Doesn't even need the biscuit / shortbread accompaniment.

The simplicity of this recipe is misleading. Its just so good for so little effort! I found shortbread a little heavy the first time and the second time served it with Brandy snaps which gave a good crunchy texture.

Lovely dessert, simple but effective. Looks very nice served in a small wine glass and is a light, refreshing end to a meal. Lovely with the shortbread. I also had the problem that the lemon curd made blobs rather than swirls, but I don't think it mattered because it was still delicious. Great for dinner parties, as it's so quick but gives great results.

Made these my parents when they came for dinner and went down a treat. My raspberries were a bit tarty but the yogurt and lemon went nicely with them.
