Leftover turkey wraps with cranberry sauce

Ingredients
- 4 tbsp cranberry sauce
- 4 tortilla wraps
- 1 Little Gem lettuce, roughly sliced
- 200g cooked turkey meat, shredded or sliced
- 120g leftover roast vegetables, chopped
- 150g leftover cooked stuffing, sausages or pigs in blankets, crumbled or sliced
- 4 tbsp braised red cabbage or pickled cabbage
- 4 tbsp mayonnaise
- 1 tsp wholegrain or Dijon mustard
Method
- STEP 1
Spread the cranberry sauce over the wraps, leaving a 2cm border around the edge. Arrange the lettuce, turkey, roast veg, stuffing and cabbage down the middle of the wraps.
- STEP 2
Mix the mayonnaise with the mustard, and drizzle this over. Fold the top and bottom of the wrap over the filling, then roll up from one side like a burrito to enclose the filling. Slice diagonally across the middle to serve.
