
Leftover turkey wraps with cranberry sauce
Make this quick lunch using all the flavours of Christmas, including surplus cranberry sauce, red cabbage and turkey. It's ideal for Boxing Day
- 4 tbsp cranberry sauce
- 4 tortilla wraps
- 1 Little Gem lettuceroughly sliced
- 200g cooked turkey meatshredded or sliced
- 120g leftover roast vegetableschopped
- 150g leftover cooked stuffingsausages or pigs in blankets, crumbled or sliced
- 4 tbsp braised red cabbageor pickled cabbage
- 4 tbsp mayonnaise
- 1 tsp wholegrain or Dijon mustard

Method
step 1
Spread the cranberry sauce over the wraps, leaving a 2cm border around the edge. Arrange the lettuce, turkey, roast veg, stuffing and cabbage down the middle of the wraps.
step 2
Mix the mayonnaise with the mustard, and drizzle this over. Fold the top and bottom of the wrap over the filling, then roll up from one side like a burrito to enclose the filling. Slice diagonally across the middle to serve.
