Hot & spicy wings with maple chipotle hot sauce

  • 1kg chicken wings, halved at the joint, wing tips removed and discarded

For the spice rub

  • 1 tsp cayenne pepper
  • 1 tsp garlic granules
  • 1 tsp celery salt
  • 1 tsp golden caster sugar
  • 1 tsp mustard powder
  • 1 tbsp vegetable oil

For the hot sauce

  • 2 tbsp cider vinegar
  • 2 tsp smoked paprika
  • 1 tbsp Worcestershire sauce
  • 3 tbsp hot chilli sauce
  • 2 tbsp maple syrup

  • 1 tbsp chipotle paste


  1. Heat oven to 200C/180C fan/gas 6. In a small bowl, mix the ingredients for the spice rub together. Put the chicken wings in a large bowl and mix with the spice rub and a good amount of seasoning. Spread out in a single layer on a large foil-lined baking tray (or 2 smaller ones). Roast for 45 mins, then remove from the oven and drain off any excess oil.

  2. Heat a gas or charcoal barbecue to high. Mix the ingredients for the hot sauce in a small bowl and brush all over the chicken wings. Cook the wings on direct heat on the barbecue for 3-4 mins each side or heat oven to 220C/200C fan/gas 7 and cook the wings for 15 mins. Serve with plenty of napkins.

Sorry but this was not hot at all, so I will add others like chillies etc. The cooking time is also extremely long. You'll end up with dried up wings.

This obviously depends on what chilli sauce you use! Use a hotter one if you like it spicy.

We usually have another GF wing recipe so this was a departure. Absolutely gorgeous. I was worried the rub wouldn't go far enough but it definitely does. The sauce was about double what was actually used. I will definitely make again but will reduce the cooking time by 15 mins. 60 mins for wings at the recommended temperature setting makes them far too dry.

These were delicious! I put 1 tbsp of Tabasco instead of 3 tbsp of hot sauce and that definitely made them hot enough without blowing your head off. Great to take to a BBQ or party.

Made this in the oven, I didn't use celery salt or Worcestershire sauce but they were very nice, crispy and a good spicy kick to them
