  • 140g mature cheddar, grated

Method

  1. Cook the pasta, adding the broccoli for the final 4-5 mins and cooking until tender. Drain well, then heat the grill.

  2. Heat the butter in a saucepan and stir in the flour. Cook for 1 min, then gradually add the milk, stirring well between each addition. Bring to the boil, stirring, then simmer for 2 mins, before stirring in the mustard, half the cheese and seasoning.

  3. Mix the pasta and broccoli into the sauce and spoon into an ovenproof dish. Scatter over the remaining cheese and place under a hot grill for 3-4 mins until golden and bubbling.

I made it and it was pretty good. Definitely use mature cheddar or it will be bland. If you’re not going to put cheese on top and grill, put some more cheese in the sauce.

Could be better with more detailed instructions on the seasoning, as it turned out rather bland. But other than that everything is there to make a professional style bake

A delicious base recipe that can easily be 5* with some tweaks or additions. I added cooked chicken and mushrooms, swapped half the broccoli for cauliflower, and used more cheese (because more cheese is always better). I will experiment with some of the other suggestions in the comments when cooking again.

I’d probably add more cheese next time! However, nice recipe, kids had seconds and I rather enjoyed it, I even ate my broccoli :-)

If a recipe says add seasoning generally they are referring to salt and pepper unless stated otherwise.

Thanks for your question. Yes, you can refrigerate leftovers and reheat them in the microwave. The golden topping will soften but it'll still taste great.

It was a filling recipe, defo needed a bit more flavour so I added some salt and pepper and a bit more mustard and it came out great.
