Method

  1. Heat oven to 200C/180C fan/gas 6. Mix the muffins with the sultanas. Divide between 4 buttered ramekins or one baking dish. Cover with foil and bake for 8 mins until just warmed through.

  2. Meanwhile, place the sugar, butter and cream in a small pan and gently heat together, stirring until the sugar dissolves. Pour the sauce over the muffin mixture and serve warm with ice cream.

What did I do wrong? I followed the ultra easy instructions and my muffin/sultana mix would not form into anything from a crumbly texture? So when served, it was more like lumpy sauce? :(

After spending all day cooking dinner for my dad for his birthday, I wanted a quick dessert. This was lovely and really quick and simple to make. I did double the toffee sauce recipe and I'm glad I did or it would have been a bit dry. I left out the sultanas because my husband isn't keen on dried fruit. I'm going to make the toffee sauce again as I think it'll be lovely drizzled over ice cream.

Had some left over mini muffins that were just a little dry. What a fantastic way to use them up! 2 mini muffins in each ramekin without sultanas served four easily. So quick to make and tasted absolutely delicious. Made the muffins very moist and yummy, so don't write off leftover muffins for this recipe :)

Great idea - so quick. I used dates instead of raisins and just 2 muffins between 3 of us and it was plenty. Really good quick pudding.

Brilliant recipe. So quick to make and delicious. I did this for three people and we had it two nights running so plenty for 4. I loved the banana version. Will certainly do this again.

It was the excellent reviews that persuaded me to try this - and I am so pleased I did! Great little cheat which tasted amazing. I followed the advice to soak the sultanas in sherry which made them taste delicious - highly recommended!

What a fantastic cheat, I made this for four but used 3 chocolate muffins, soaked chopped dates in dry sherry overnight and served with a very good vanilla ice cream. Lots of lovely comments on my cooking skills!! if only they knew ssshh

What a simple but delicious desert! I used 4 choc chip muffins and skipped the sultanas. It easily made 5 although everyone said next time make more of the yummy sauce!

Will these puddings hold their shape if I popped them out of the ramekins when serving?
