Method

  1. Heat oven to 220C/fan 200C/gas 7. Beat the olives or sundried tomatoes, garlic and almost all the herbs into the cheese, then season. Cut a slit along the side of each chicken breast, then use your knife to open it out into a pocket.
  2. Stuff each breast with a quarter of the cheese mix, then press to close. Lift onto a greased baking tray. Season the top of the chicken, then overlap tomato slices over the top of each piece of chicken. Season, then scatter with the remaining herbs. Drizzle with olive oil.
  3. Roast for 20 mins until the chicken is golden around the edges and the tomatoes look a little shrivelled. Serve with a green salad and crusty bread to mop up the juices.

To vary this recipe, you can swap the soft cheese for a soft garlic and herb cheese.

    This is great & so easy but didn't find there was much juice to be mopped up with the bread. will be doing it again as clean plates all round.

    Plan to make this when my sister and hubby come to stay as they like something a little different. Will leave the cheese off my piece of chicken though as melted cheese makes me sick which is a pest as this looks really good.

    Made this for a dinner party and everyone raved about it - I used cream cheese mixed with pesto and wrapped chicken in parma ham which helped keep the chicken moist and succulent - delicious and easy for everyday or entertaining.

    Can't wait for Summer to arrive & bring the sunshine- but until then this is sunshine on plate. Crack open a chilled bottle of white, raid the summer wardrobe & with the heating on you could almost imagine you are sitting in the sun with this meal. Cheer up mealtimes more!

    Was tonight's dinner and it went down very well with my boyfriend! Did have to leave it in for an extra 10 mins from what the recipe says, so 30 mins instead of 20, but otherwise went without a hitch!

    Fantastic, cooked this in individual shallow bowls which kept the moisture in so plenty of juice to mop up. I left the chicken skin on and crisped it up and cooked the tomatoes on the side sprinkled with balsamic vinegar - will cook again.

    I made this with chopped sundried tomatoes and loads of crushed garlic in with the cream cheese and it was fantastic! Have made it this way loafds of times and everyone raves about it.
