A lovely twist on this is to use grated mature cheddar, finely chopped onion, a little chopped ham, some mayo and a touch of mustard to bind together. Mix together and spread on top of toast, then whack under the grill yummy yum yum.

Utterly ruined by the accompaniment of Stella. Lager and cheese? You'll be wracked by indigestion my son.

You're havin' a giraffe! (laugh) For the keen chef? Where's the obligatory Lea and Perrins? No pepper? This dish is also known as a *welsh rare-bit', AKA Cardiff Virgin. (Now, that's really rare!). OK, accepted. However, from the book of "Wrong Shui": "If your bread always falls from the table butter-side down, simply butter the other side". (Forget the Stella, it's foreign. Go for Newcastle Broon. Oh, I think Newkie is nowadays. My bad.) (Nice one, Sunsh.) -Andy, Oulu, Finland.

I do prefer a more mature cheese for toast, but well illustrated.

I think you're about as optimistic as Jamie Oliver with his 30 minute meals. 5 hours is a bafflingly short time for this. Do you prep everything first to ensure you're done in that time?

Too bland. You need mexican cheese with chilli and pepper. Also, a few splashes of lea and perrins. Cheese on toast can be exciting! Experiment!
