Method

  1. Toss some hot boiled new potatoes with the olive oil, lemon juice and parsley. Leave to cool, then toss with quartered hard-boiled eggs. Toss with wild rocket leaves and some diced cucumber to serve.

This is a great basis for a new potato and egg salad. I use it all the time, adding avocado / olives / spinach as well. Just to follow the recipe as stated makes a great salad. I served it with a cous cous salad and pine nut dish and some crusty bread during the summer.
