Method

  1. Cook the quinoa following pack instructions - it should be tender but with a little bite. Drain well and spread over a platter or wide, shallow bowl to cool quickly and steam dry.
  2. When the quinoa is just about cool stir through all of the remaining ingredients with plenty of seasoning.

    Made this recipe to go with BBQ - it was really delicious, very fresh and tasty. The only tweak I made was the quinoa I used was a mixed pack; red, white and bulgar wheat. Great for packed lunch the next day too.

    Very nice and flavoursome, I used one whole pomegranate. I also used whole pack of feta though (got a bit enthusiastic) and I think next time I will just stick to the recipe 100g as it was too much.

    I made it as per the recipe and we had it as our main course. It was v tasty but for us it could have handled about 50% more feta and in chunks rather than crumbled. Will definitely be making this again.

    Does the 300g of Quinoa refer to the amount of dried Quinoa, or the amount of heavier, prepared Quinoa?

    This is easy and absolutely delicious. I forgot to include the sugar and it was still gorgeous, so why add sugar when you don't need to?! Really delicious. I shall be making this again. And again.
