Coriander steaks with tomato & rocket salad

A new twist on classic peppered steak - so simple to prepare. This recipe serves 2, but is easily doubled

Method

  1. Crush the coriander seeds with the black peppercorns. Add the dried red chilli flakes, then use to coat both sides of the steaks. Set aside. Preheat a griddle pan on a high heat.
  2. Cut the cherry tomatoes in half then toss with the red onion, olive oil and lemon juice and season with salt, pepper and a pinch of sugar. Toss in the rocket.
  3. Griddle the steaks for 2-3 minutes each side, allow to rest, and serve with the salad.

    I omitted the chilli flakes but added crushed garlic, i marinated the steaks using asmall coating of oilive oil, the garlic and corriander and pepper, all crushed. Excellent result!

    I only made the salad as i wanted something to go with paella, beware this makes enough dressing for around 10 portions!! luckily i made the dressing to add to the tomatoes
