Make it veggie - Roasted veggie club
Serves 1 - Slice 1 small aubergine and 1 courgette, brush with 2 tbsp olive oil and season. Grill for 2-3 mins a side. Use this in place of the chicken and bacon, and swap the egg for a few slices vegetarian mozzarella. Add 1 tsp pesto to the mayo for an Italian-inspired treat.
