1 ginger(grated) do not use the centre of the ginger.
2 Chillies (Green and red )
Coconut milk ( 500ml)
12 prawns
1 lemongrass chopped
5 Scallions chopped
Method
STEP 1
Place the onions, garlic, ginger, chillies in a deep frying pan, then fry for 2-3 mins. Add the coconut milk, prawns and boil for 3 mins. Then add lemongrass and scallions. Continue to cook for 3-4 mins. Serve with mixed vegetables rice.
