Ingredients
Cake
- 150g butter or margarine at room temperature
- 2 eggs
- 2 lemons
- 200g sugar
- 1/4 tsp salt
Topping
- 150g butter or margarine at room temperature

- 100g icing sugar
- 1 lemon
Method
- STEP 1Preheat oven to 180 degrees Fahrenheit. Line a round baking tin with greaseproof paper and grease.
- STEP 2Mix together the butter and sugar until just combined. Add the eggs and stir until just combined.
- STEP 3Add the zest and juice of 2 lemons, flour, sugar and salt and combine.
- STEP 4Add to tin and bake for 25 minutes until cooked though. Leave to cool thoroughly.
- STEP 5Make the topping by combining the zest and juice of one lemon with the icing sugar and pour over the top. It should be quite runny so it absorbs into the cake slightly.
- STEP 6Enjoy with a cup of tea :)
