Cake

  • 150g butter or margarine at room temperature
  • 2 eggs
  • 2 lemons
  • 200g sugar
  • 1/4 tsp salt

  • 150g butter or margarine at room temperature
  • 2 eggs
  • 2 lemons
  • 200g sugar
  • 1/4 tsp salt
  • 100g icing sugar
  • 1 lemon

    Method

    • step 1

      Preheat oven to 180 degrees Fahrenheit. Line a round baking tin with greaseproof paper and grease.
    • step 2

      Mix together the butter and sugar until just combined. Add the eggs and stir until just combined.
    • step 3

      Add the zest and juice of 2 lemons, flour, sugar and salt and combine.
    • step 4

      Add to tin and bake for 25 minutes until cooked though. Leave to cool thoroughly.
    • step 5

      Make the topping by combining the zest and juice of one lemon with the icing sugar and pour over the top. It should be quite runny so it absorbs into the cake slightly.
    • step 6

      Enjoy with a cup of tea :)
