White Choc & Raisin Cookies

Delicious healthy cookies to pop in the kids packed lunch/ or enjoy (as my other half did) with a nice cup of tea in front of the tv!!!

  • Ingredients:
  • 2/3 cup butter or margarine, softened
  • 2/3 cup brown sugar
  • 2 medium eggs
  • 1 1/2 cups oatbran
  • 1 1/2 cups plain flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup of raisins
  • 2/3 cup white chocolate chunks or chips


    1. Beat butter or margarine and brown sugar together in a mixing bowl until light and fluffy
    2. Add the two eggs and mix well
    3. In a separate bowl, combine oatbran, flour, baking powder and salt
    4. Add the flour/bran mix to butter mix gradually, mixing well after each addition
    5. Add raisins and white chocolate chunks/chips, mix well
    6. Prepare a baking tray with greaseproof paper, grease and dust with flour, shaking off any excess
    7. Drop rounded teaspoons of mix on the the prepared tray, flatten slightly (should make 12-14)
    8. Bake for 15 minutes on 190C or until golden brown. Cool on wire rack
