Moist chocolate muffins

  • 2 large eggs
  • 180 g castor sugar
  • 150g all-purpose flour
  • 6 tbp cocoa powder, unsweetened
  • 2 tsp baking powder
  • 1 tsp vanilla essence
  • 150 ml milk
  • 150 g butter melted
  • 3 tbp creme fraiche or sour cream
  • 120 g dark chocolate chunks (use dark chocolate min 50% cocoa butter) - chopped it up - chunky


    1. Preheat oven to 350 F (180 C).
    2. Grease medium sized muffin tins and place 10 paper cases onto them
    3. Beat the eggs with sugar, mix in the sifted flour, cocoa powder, baking powder, vanilla and milk. Mix well but do not overbeat!
    4. Fold in the melted butter, then add the creme fraiche Lastly stir in the chocolate chunks after that.. Scoop with a spoon to fill in the paper cases.
    5. Bake at 350 F/180 C in the upper middle rack of the oven . Bake for approximately 30-35 minutes. Use a wooden pick to insert in center , it should come out clean.

Just made these muffins and they came out perfectly, so soft. Only needed to bake them for 25mins at 180

Wanted a recipe to use up spare creme fraiche, what a great find. Really moist. Next time I might try adding a whole Lindor chocolate to the middle instead of the chopped chocolate to hopefully give a soft centre. Be careful though this will be very hot if you eat them warm!

Great great recipe as it's very moist. We ended up dividing it by 12 cup-cake cases rather than 10 muffin cases as suggested in the text. So yum!

It is a fool proof recipe of chocolate muffins. Chocolatey , moist and easy to make. I always bring them to parties.
