A deliscous Italian dessert!

  • 20-24 sponge fingers
  • 2tbsp cold black coffee
  • 2tbsp coffee essence
  • 2tbsp amaretto
  • 4 egg yolks
  • 90g caster sugar
  • 3 drops vanilla essence
  • grated rind of half a lemon
  • 350g mascarpone cheese
  • 2tsp lemon juice
  • 250ml double cream
  • 1tbsp milk
  • 30g lightly toasted almonds
  • 2tbsp cocoa powder
  • 1tbsp icing sugar


    1. arrange half of the sponge fingers in the base of a serving dish.Combine the coffee,coffee essence and amaretto and pour half the mixture over the sponge fingers.
    2. put the egg yolks,sugar,vanilla essence and lemon rind in a heat proof bowl and stand over a pan of gently simmering water and whisk until thick and creamy.
    3. put the marscapone and the lemon juice in a bowl and beat until smooth.Then combine the egg and the cheese mixtures, when evenly blended pour half over the fingers and spread out evenly.
    4. add another layer of fingers,sprinkle with the remaning coffee and top with the rest of the cheese and egg mixture and leave to chill for 2 hours.
    5. to serve,whip the cream and milk togeher until stiff then spread it over the dessert.Sprinkle with the almonds.Finnaly dust with an even layer of cocoa powerder. Then lightly dust with icing sugar.
