step 1
Heat up griddle (either hob pan or a food press grill) Place chicken on the gill and cook until juices run clear about 7 in food press grill or 6 minutes on a griddle either side. remove and wrap in tin foil to rest.

In a frying pan cook a good hand full of Red onion's till they soften but with a bit of bite remove from frying pan using the same pan add a piece of Smoked garlic FINELY chopped and then open the cooked that you wrapped in foil and use the juices that have been released from the chicken to cook the garlic in, cook the garlic until really soft on a low heat. once cooked place in a small bowl and mix into two dessert spoon of mayonnaise to create garlic mayonnaise.

Slice two pieces of crusty bread (Like Wholemeal) spread both side with mayonnaise

slice the chicken Brest and lay it on one slice of the bread then add the cooked onions and place a hand full of mixed leaf lettuce now place the other slice of bread on top slice into four pieces
