Quick and Fragrant Prawn Curry

Ingredients
- 2 tsp vegetable oil
- 2 Onions, Sliced
- 4 Garlic Cloves, Diced
- 6 Tomatoes, chopped
- 1 tsp Fennel Seed
- 1 tsp Fenugreek Seeds (Methi Seeds)
- 1 tsp Cumin Seeds
- ½ cup Fresh Mint , chopped
- ½ cup Fresh Coriander , chopped
- 4 tsp Fish Masala
- 400 g cooked Prawns
Method
- STEP 1Fry the seeds in the oil for a minute until fragrant
- STEP 2Add onion and garlic and fry gently until soft - roughly 5mins
- STEP 3Add tomatoes, fish Masala & half of the herbs and cook for 5-7 minutes until tomatoes break up
- STEP 4Add the prawns and continue to cook for 5 mins
- STEP 5Take off the heat and stir in remaining herbs and serve with basmati rice
