Ingredients
Berbere Spice Blend
3 tbsp paprika
1 tbsp fenugreek
1 tsp chilli flakes
1 tsp coriander
1 tsp ginger powder
1 tsp onion flakes
1 tsp garlic powder
1 tsp cloves
1 tsp cumin
1 tsp cinnamon
Berbere Chicken
3 tbsp paprika

2 tbsp berbere spice
Salt to taste
2 chicken fillets, sliced
Berbere Chicken Pasta
3 tbsp paprika
1 tbsp fenugreek
1 tsp chilli flakes
1 tsp coriander
1 tsp ginger powder
1 tsp onion flakes
1 tsp garlic powder
1 tsp cloves
1 tsp cumin
1 tsp cinnamon
2 tbsp berbere spice
Salt to taste
2 chicken fillets, sliced
2 tbsp sunflower oil
1/2 onion, chopped
2 fillets berbere chicken, sliced
1 can chopped tomatoes
200g pasta (any short pasta shape)
1 tbsp berbere spice blend
Salt to taste
100g sugar snaps, sliced
100g mushrooms, sliced
Method
STEP 1
Make the berbere spice blend by mixing all the spices together in one bowl.
STEP 2
Prepare the berbere chicken by sprinkling the spice mix and some salt on the chicken. Mix well with a wooden and keep aside.
STEP 3
Fry the onions in the oil until translucent. Pour in the chicken slices and allow to cook on both sides to seal the spices in.
STEP 4
Add the chopped tomatoes, pasta and some water. Add the additional berbere spices and some salt to taste. Give it a stir and cover the pan.
STEP 5
Allow to cook for the time specified on the pasta pack. Just before it is ready, add the vegetables and cover for a few minutes. Remove from heat and serve.
