Creamy Pasta with Frankfurters

Very rich full of fat - but delicious - only have as a rare treat!!!

  • For the Pasta
  • 200g of Dried Pasta - any type works but I use tagliatelle
  • 2 tbsp of oil
  • Pinch of salt
  • For the Sauce
  • 1 tsp of oil
  • 3/4 Frankfurters sliced on the diagonal
  • 1 small onion - chopped
  • 2 garlic cloves - minced
  • 15g Chirizo Sausage - chopped into small pieces
  • Pinch of Dried Chilli Flakes
  • Pinch of Dried Basil
  • 200ml of Cream
  • 25g Grated Parmesan Cheese
  • Pinch of salt
  • Large pinch of Ground Black pepper


    1. Heat a pot of water on a medium to high heat - Once at the simmer add the salt and oil - bring to the boil and add the pasta - Stir frequently to prevent sticking
    2. While the pasta cooks prepare your ingredients for the sauce - everything goes in pretty quick so pre prepared is best.
    3. Heat the oil in a non stick pan over a medium heat. Add the Garlic and Onion and cook for 1 minute
    4. Add the Frankfurter and Chirizo and fry until the Chirizo starts to release an orange coloured oil
    5. Add the chilli, basil (if using) and the black pepper. Add half the cream and half the parmesan - reduce to thicken
    6. Once it has thickened repeat with the remaining cream and cheese and reduce again
    7. Drain the pasta once cooked and add the sauce mixture - stir until all the pasta is coated and serve with a pinch of pepper and parmesan over the top

So easy to make and really tasty. I used chilli frankfurters and skipped the chilli flakes - you still get the kick. Ideal meal after a busy day at work.

If you fancy making this a wee bit more healthy - try reducing the amount of cream and adding veg stock instead - also really nice with a chopped red bell pepper added - this would go in at the same time as the frankfurter and chirizo
