Light+fluffy like a normal sponge

  • 125g/5oz sugar
  • 6 tbsp sunflower oil
  • 1tbsp vanilla extract
  • 1/2 ripe banana
  • 150g/6oz gluten free self raising flour
  • 4tbsp water
  • 1tsp oil
  • 2tbsp jam
  • 1tsp icing sugar


    1. Lightly oil or greaseproof 18cm/7" round cake tin preheat oven190/gas5
    2. in a bowl beat sugar,oil+vanilla peel+mash banana into sugar mix
    3. Add flour+water+mix well, turn mixture into prepared cake tin+smooth the top
    4. bake in a preheated oven for 35mins+then cool on a wire rack
    5. Slice sponge in half spread bottom half with other half on top, dust with icing sugar

Added some cocoa powder +divided mix in bun trays for my own special buns am disappointed i didnt make enough as they turned out fab
