Ingredients

  • 1 lb apricots, pipped
  • 1.5-3 oz sugar or honey
  • 1 vanilla bean, seeds scraped
  • 1 strip lemon zest and 1 tbsp lemon juice
  • 2 tbsp water

Method

  • STEP 1
    Mix all ingredients in a pan, boil slowly until the sugar dissolves then rapidly until the fruit is nice and soft. I like it mushy but others like the fruit firmer, it's your choice.
