Fresh apricot compote with vanilla bean

- Serves 12
Lovely for desserts with yoghurt, tarts etc
- 1 lb apricots, pipped
- 1.5-3 oz sugar or honey
- 1 vanilla bean, seeds scraped
- 1 strip lemon zest and 1 tbsp lemon juice
- 2 tbsp water
- STEP 1Mix all ingredients in a pan, boil slowly until the sugar dissolves then rapidly until the fruit is nice and soft. I like it mushy but others like the fruit firmer, it's your choice.
