Caramelised Plums with honey yoghurt and lyons syrup cake

  • 1kg Ripe Plums
  • 500ml Greek Yoghurt with Honey (Asda do a good one)
  • 1 Lyons Golden Syrup Loaf Cake
  • 100g Unsalted Butter
  • 150g Soft Brown Sugar


    1. Halve and stone the plums and put them cut side up in a roasting tin
    2. Cut the butter into small pieces and dob randomly over the plums
    3. Sprinkle over the sugar and put in hot oven (200'c) for 20-25 mins or until cooked and caramelised with lots of lovely dark juices (leave to cool at this stage if desired)
    4. slice your cake into 10 slices and put each slice up the side of a ramekin or individual serving dish/glass
    5. Top with a spoonfull of cooked plums and some juices
    6. Finish with a spoonfull of the yoghurt - you can leave these for several hours at room temperature, they actually improve as the cake soaks up the caramelised juices. Enjoy!

Just like to say that I've tasted these and enjoyed them very much, just the right amount of sweetness yet still quite light - ideal for breakfast or dessert.
