  • 1 mug Self Raising Flour
  • 1/2 mug Sweetner Sugar
  • 1 mug Semi-skimmed milk
  • 1 mug Wheat or 5 wheatabix (crumbled)
  • 1 mug Saltanas
  • 1 teaspoons mixed spice
  • 1 tsp ground cinnamon
  • 1 teaspoon baking soda

    Method

    • step 1

      In a mixing bowl mix wheat, saltanas and sugar. Stir in milk, cover and leave to soak for at least 1hr - 2hrs.
    • step 2

      Add flour, baking soda, cinnamon and mixed spice, stir well. The mixture will be quick thick and sticky.
    • step 3

      Transfer mixture to well greased loaf tin.
    • step 4

      Place in a moderate oven 150-160C for 1hr - 1hr 15mins. check with skewer to ensure cooked.
    • step 5

      (Tip: half way through cooking time, cover with foil to prevent over browning)
    • step 6

      Allow to cool for 5mins before turning out of tin and onto a baking tray.

      This cake is a lovely lower fat alternative to fruit cake. Its wonderful sliced warm with low fat spread/butter.

    It's a simple and healthy recipe. V quick n easy to make. I substituted the wheat with muesli. Used half the amount of fruit. Thnx.

    I love it, this is a very tastly cake, so simple to make, Ive made it a few times, I changed the sweetner to caster sugar but still figure its better for me than the usual stuff I eat, given its got no butter and it contains wheat!!!

    Can you tell me what the fat, calorie etc. content is, for this recipe please? I'm trying it for my husband as an alternative to his Mum's lovely (full of fat etc.) fruit cake... ;D Thanks
