Ingredients
- 1 egg
- 1/4 cup protein powder (vanilla)
- 1/4 coconut flakes
- 1/2 cup ground almond flour
- 1/4 cup sugar
- 1/2 cup self raising flour
- 2 teaspoons baking powder
- 1/3 cup vegetable, coconut or almond oil
- 1/3 cup milk or almond milk
- 1/2 cup blueberries
- 1/4 cup strawberries
Ground Almond Crumble
- 1 egg
- 1/4 cup protein powder (vanilla)
- 1/4 coconut flakes
- 1/2 cup ground almond flour
- 1/4 cup sugar
- 1/2 cup self raising flour
- 2 teaspoons baking powder
- 1/3 cup vegetable, coconut or almond oil
- 1/3 cup milk or almond milk
- 1/2 cup blueberries
- 1/4 cup strawberries
- 1 1/2 tablespoons self raising flour
- 1 tablespoon ground almond (almond flakes)
- 1/2 tablespoon unsalted butter
- 1/4 teaspoon cinnamon
Method
- STEP 1Preheat oven to 170 degrees C. Grease cake tray or like tray with cake tin with parchment paper.
- STEP 2Combine flours, coconut flakes, protein powder, sugar, and baking powder.
- STEP 3Add oil, egg and milk and mix into the dry ingredients.
- STEP 4Fold in blueberries and strawberries. Pour into cake tin and sprinkle with crumb topping mixture.
- STEP 5To Make Crumb Topping: Mix together sugar, various flours, butter, and cinnamon. Mix with fork, and sprinkle over cake before baking.
- STEP 6Bake for 30 minutes in the preheated oven, or until done.
