Ingredients

  • 1 egg
  • 1/4 cup protein powder (vanilla)
  • 1/4 coconut flakes
  • 1/2 cup ground almond flour
  • 1/4 cup sugar
  • 1/2 cup self raising flour
  • 2 teaspoons baking powder
  • 1/3 cup vegetable, coconut or almond oil
  • 1/3 cup milk or almond milk
  • 1/2 cup blueberries
  • 1/4 cup strawberries

Ground Almond Crumble

  • 1 egg
  • 1/4 cup protein powder (vanilla)
  • 1/4 coconut flakes
  • 1/2 cup ground almond flour
  • 1/4 cup sugar
  • 1/2 cup self raising flour
  • 2 teaspoons baking powder
  • 1/3 cup vegetable, coconut or almond oil
  • 1/3 cup milk or almond milk
  • 1/2 cup blueberries
  • 1/4 cup strawberries
  • 1 1/2 tablespoons self raising flour
  • 1 tablespoon ground almond (almond flakes)
  • 1/2 tablespoon unsalted butter
  • 1/4 teaspoon cinnamon

Method

  • STEP 1
    Preheat oven to 170 degrees C. Grease cake tray or like tray with cake tin with parchment paper.
  • STEP 2
    Combine flours, coconut flakes, protein powder, sugar, and baking powder.
  • STEP 3
    Add oil, egg and milk and mix into the dry ingredients.
  • STEP 4
    Fold in blueberries and strawberries. Pour into cake tin and sprinkle with crumb topping mixture.
  • STEP 5
    To Make Crumb Topping: Mix together sugar, various flours, butter, and cinnamon. Mix with fork, and sprinkle over cake before baking.
  • STEP 6
    Bake for 30 minutes in the preheated oven, or until done.
