  • 1 tbsp oil
  • 4 cloves garlic, crushed

for the paste

  • 1 tbsp smoked paprika
  • 1 tsp dried oregano
  • 1/4 tsp hot chilli powder
  • 1/8 tsp cayenne pepper
  • 1 tsp ground cumin
  • 1 1/2 tbsp muscovado sugar
  • 1 small dried ancho chilli, finely chopped
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/2 ground black pepper
  • 100 ml coca cola
  • 1 tbsp mustard
  • 2 tbsp red wine vinegar
  • 250g heinz tomato ketchup

    Method

    • step 1

      heat oil in saucepan and fry garlic until fragrant
    • step 2

      in a bowl mix ingredients for the paste and add to the garlic and mix through for a few seconds and add the coca cola, stir until well mixed
    • step 3

      add mustard, red wine vinegar and ketchup and simmer for 10 minutes until thickened
    • step 4

      transfer to sterilised jar and store in refridgerator

    thanks, glad you liked it. the mustard was French American style mustard ( hot dog mustard)

    A lovely sauce with more depth of flavour than my normal sauce. It was a bit like a sweet and sour but with definite BBQ flavours...very good! I wasn't sure which mustard to use though so opted for Dijon but maybe it should've been English?
