Meatballs
- 500g Lean turkey mince
- 200g Spinach
- 1 Onion (red or white)
- 2 cloves of garlic
- 1 chilli pepper (optional)
- Italian herb seasoning (dry herbs of choice)
- Salt & pepper to taste
Sauce
- 500g Lean turkey mince
- 200g Spinach
- 1 Onion (red or white)

- Salt & pepper to taste
- 1 clove of garlic (crushed)
- 1 tsp dry chilli flakes
- 1 can (400g) chopped tomatoes
- 1 tbsp tomato purée
- 1 tsp honey
- Good handful fresh basil leaves
'Pasta'
- 500g Lean turkey mince
- 200g Spinach
- 1 Onion (red or white)
- 2 cloves of garlic
- 1 chilli pepper (optional)
- Italian herb seasoning (dry herbs of choice)
- Salt & pepper to taste
- 1 clove of garlic (crushed)
- 1 tsp dry chilli flakes
- 1 can (400g) chopped tomatoes
- 1 tbsp tomato purée
- 1 tsp honey
- Good handful fresh basil leaves
- Courgette
Method
- STEP 1Preheat oven 200C (fan) In a food processor blitz together the onion, garlic, spinach, chilli if using, seasoning & dry herbs.
- STEP 2In a large bowl, combine the mixture with the turkey mince. You may at this stage wish to add an egg to help bind the ingredients.
- STEP 3Roll the mixture into desired sized balls & place onto a lined baking tray.
- STEP 4Place meatballs in oven for approx 20 mins check cooked through thoroughly.
- STEP 5In the meantime make the sauce! Heat some oil in a saucepan & add crushed garlic with dry chilli flakes & heat for 2 mins to release flavour.
- STEP 6Add chopped tomatoes, purée & honey. Simmer for 10 mins.
- STEP 7Add basil leaves & using a stick blender blitz the sauce smooth. You can add your cooked meatballs into the sauce for a couple mins before serving with pasta.
- STEP 8For a healthier low carb alternative to pasta, using a speed peeler, peel a courgette into long strips to resemble tagliatelle. Add the strips of courgette to the sauce for 2 mins to hear through and serve!
