A tasty soup packed with lots of flavours which is perfect to warm you up and feel happy!!

  • 1 medium potato
  • 1 white onion
  • 2 leeks
  • 250ml water
  • 1 stock cube
  • 25g margarine or 1 tbsp oil
  • Salt and pepper
  • mixed herbs - bouquet garni


    1. Prepare the vegetable. Make sure that they are chopped to good size so that they are not too big
    2. Put water into jug and add stock cube to it. Stir well
    3. Melt the fat in a saucepan over a low-medium heat
    4. Add the diced vegetables to the pan. Fry with a wooden spoon for 2 minutes
    5. Add salt, pepper and mixed herbs
    6. Stir in the stock and bring to the boil. Once it has been brought to the boil, simmer for 15 minutes or until the vegetables are soft.
    7. Blend if you wish to give it a texture and consistency that you desire
