Ingredients

  • 1 medium potato
  • 1 white onion
  • 2 leeks
  • 250ml water
  • 1 stock cube
  • 25g margarine or 1 tbsp oil
  • Salt and pepper
  • mixed herbs - bouquet garni

Method

  • STEP 1
    Prepare the vegetable. Make sure that they are chopped to good size so that they are not too big
  • STEP 2
    Put water into jug and add stock cube to it. Stir well
  • STEP 3
    Melt the fat in a saucepan over a low-medium heat
  • STEP 4
    Add the diced vegetables to the pan. Fry with a wooden spoon for 2 minutes
  • STEP 5
    Add salt, pepper and mixed herbs
  • STEP 6
    Stir in the stock and bring to the boil. Once it has been brought to the boil, simmer for 15 minutes or until the vegetables are soft.
  • STEP 7
    Blend if you wish to give it a texture and consistency that you desire
