Leek and Potato Soup

Ingredients
- 1 medium potato
- 1 white onion
- 2 leeks
- 250ml water
- 1 stock cube
- 25g margarine or 1 tbsp oil
- Salt and pepper
- mixed herbs - bouquet garni
Method
- STEP 1Prepare the vegetable. Make sure that they are chopped to good size so that they are not too big
- STEP 2Put water into jug and add stock cube to it. Stir well
- STEP 3Melt the fat in a saucepan over a low-medium heat
- STEP 4Add the diced vegetables to the pan. Fry with a wooden spoon for 2 minutes
- STEP 5Add salt, pepper and mixed herbs
- STEP 6Stir in the stock and bring to the boil. Once it has been brought to the boil, simmer for 15 minutes or until the vegetables are soft.
- STEP 7Blend if you wish to give it a texture and consistency that you desire
